The system nobody sees,
and everybody depends on.

Extraction, make-up air and fire suppression decide whether a kitchen is workable, compliant and insurable. We deliver them as part of the kitchen — designed with it, not bolted on after.

Why it decides everything

Get the air wrong and
nothing else works.

An under-extracted kitchen fills the dining room with smoke. An over-extracted one pulls conditioned air out of the building and drives the energy bill up every hour of service.

Get the balance between extract and make-up air wrong and doors will not close, pilot lights blow out and staff work in a draught for the life of the building.

None of this is fixable afterwards without opening ceilings. It is decided on the drawing, alongside the cooking line: how much heat each appliance throws, where the canopy sits, how the duct leaves the building, where the fan goes and how the noise is handled.

And above the cooking line sits the part that only matters once: the fire suppression system.

What we deliver

From the canopy to the roof fan.

01

Extraction canopies

Wall, island and ceiling canopies with high-efficiency baffle filtration, sized on the real heat load of the cooking line beneath them — not on the floor area.

02

Extract & make-up air

Balanced systems: supply air introduced where it does not disturb the cooking line, ducting routed with the architect, fans selected for the noise limit of the site.

03

Odour & grease treatment

UV, ozone and carbon stages where the discharge sits near guest areas, neighbours or hotel rooms — specified when the site demands it, not by default.

04

ANSUL fire suppression

ANSUL R-102 and PIRANHA systems designed around the appliance layout, with automatic gas and power shut-off — installed and certified to UNI EN 16282-7 and UNI EN 17446 by an authorised distributor.

05

Commissioning & balancing

Airflow measured and adjusted on site, documented, and handed over with the paperwork the fire officer and the insurer will ask for.

06

Service & certification

Scheduled inspection of the suppression system, filter and duct cleaning regimes, and the certification cycle that keeps cover valid.

Strategic partner

Air treatment for professional kitchens — hoods, ventilation, odour abatement and the ANSUL fire-suppression system.

ANSUL and HALTON are registered trademarks of their respective owners. Design, installation and certification are carried out by Airchè as an authorised distributor.

Kitchen air treatment and fire suppression is a discipline with its own certifications and its own liability — so we work it with Airchè, our strategic partner.

We do not pretend to be specialists in everything.

Airchè brings the thermotechnical, aeraulic, hydraulic, electrical and software engineering behind a ventilation system, works with HALTON technology, and states it is the only certifier in Italy for the ANSUL R-102 and ANSUL PIRANHA systems. VME Group brings the kitchen, the cooking line and the coordination with the client and the architect.

For the client it is one conversation and one accountable line — not a supplier and a subcontractor pointing at each other when the airflow test fails.

Installations

Installed together, on site.

Canopies, ducting and ANSUL systems delivered and installed together with Airchè — from Treviso and Milan, on our sites in Italy and abroad.

Ventilation ductwork at first fix, above the ceiling
Canopy plenum and detection line going in
Canopy installed above the combi ovens
ANSUL discharge nozzles inside the canopy
Manual pull station and control box at the exit route
ANSUL agent cylinders in their cabinet
Release module and mechanical gas shut-off valve
Island canopy during commissioning
Supply air grille built into the dining room facade
Handed over: ceiling-integrated extraction
Handed over: island canopy and heat lamps over the pass

Not sure your extraction is right?

Send us the kitchen layout and the appliance list. We will tell you what the air has to do — and whether what is installed can do it.
