Get the air wrong and
nothing else works.
An under-extracted kitchen fills the dining room with smoke. An over-extracted one pulls conditioned air out of the building and drives the energy bill up every hour of service.
Get the balance between extract and make-up air wrong and doors will not close, pilot lights blow out and staff work in a draught for the life of the building.
None of this is fixable afterwards without opening ceilings. It is decided on the drawing, alongside the cooking line: how much heat each appliance throws, where the canopy sits, how the duct leaves the building, where the fan goes and how the noise is handled.
And above the cooking line sits the part that only matters once: the fire suppression system.

Extraction canopies
Wall, island and ceiling canopies with high-efficiency baffle filtration, sized on the real heat load of the cooking line beneath them — not on the floor area.
Extract & make-up air
Balanced systems: supply air introduced where it does not disturb the cooking line, ducting routed with the architect, fans selected for the noise limit of the site.
Odour & grease treatment
UV, ozone and carbon stages where the discharge sits near guest areas, neighbours or hotel rooms — specified when the site demands it, not by default.
ANSUL fire suppression
ANSUL R-102 and PIRANHA systems designed around the appliance layout, with automatic gas and power shut-off — installed and certified to UNI EN 16282-7 and UNI EN 17446 by an authorised distributor.
Commissioning & balancing
Airflow measured and adjusted on site, documented, and handed over with the paperwork the fire officer and the insurer will ask for.
Service & certification
Scheduled inspection of the suppression system, filter and duct cleaning regimes, and the certification cycle that keeps cover valid.
